Make this easy Dorito Casserole for a comforting, crowd-pleasing weeknight dinner. It features layers of creamy chicken filling and a crunchy, cheesy chip topping.

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 cups cooked, shredded chicken
  • 3 cups shredded cheddar cheese, divided
  • 1 (13 ounce) bag Nacho Cheese Flavored Tortilla Chips (Doritos)
  • 1/2 cup water

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground chicken and chopped onion. Cook until the chicken is browned and the onion is soft, about 8 minutes. Drain any excess grease.
  3. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, milk, garlic powder, and black pepper. Stir until smooth.
  4. Add the cooked ground chicken mixture, the shredded chicken, and 2 cups of the shredded cheddar cheese to the soup mixture. Stir everything together well.
  5. Spread half of the crushed Doritos into the bottom of the prepared baking dish.
  6. Pour the chicken mixture evenly over the chip layer.
  7. Sprinkle the remaining 1 cup of cheddar cheese over the top of the filling.
  8. Crush the remaining Doritos coarsely and sprinkle them evenly over the cheese layer to create the crunchy topping.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly golden brown.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • For a crispier topping, reserve the Doritos until the last 10 minutes of baking time, then sprinkle them on and return the dish to the oven.
  • You can substitute ground beef for the chicken for a quick ground beef casserole variation.
  • If you prefer a thinner sauce, add the 1/2 cup of water to the soup mixture when combining wet ingredients.
