  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  • In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and sugar.
  • Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat until just combined.
  • Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
  • Fold in the chocolate chips.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
