200g unsalted butter
200g dark chocolate, chopped
100g granulated sugar
100g brown sugar
3 large eggs
1 tsp vanilla extract
100g all-purpose flour
50g cocoa powder
1/2 tsp salt
100g chocolate chips (optional)
Instructions
Preheat your oven to 175°C (350°F). Grease and line a square baking tin with parchment paper.
Melt the butter and dark chocolate together in a heatproof bowl set over a pan of simmering water, or in the microwave in short bursts. Stir until smooth.
Remove from heat and whisk in the granulated and brown sugars until well combined.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, and salt.
Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
If using, stir in the chocolate chips.
Pour the batter into the prepared baking tin and spread evenly.
Bake for 25-30 minutes, or until a skewer inserted into the center comes out with moist crumbs attached.
Let the brownies cool completely in the tin before cutting into squares.
