Simple One-Pot Beef Chili

A hearty, easy-to-make beef chili suitable for weeknight dinners or feeding a crowd. This recipe works well in a slow cooker or on the stovetop.

  • 2 lbs ground beef (85% lean or leaner)
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes.
  3. Stir in the minced garlic, chili powder, cumin, and oregano. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, and beef broth. Stir to combine.
  5. Add the rinsed and drained kidney beans and pinto beans. Season with salt and pepper.
  6. Bring the chili to a simmer. Reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour.
  7. If using a slow cooker, transfer the mixture to the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  8. Serve hot with your choice of toppings.

Notes

  • For turkey chili, substitute ground turkey for the ground beef.
  • This chili freezes well for up to 3 months. Cool completely before storing in freezer-safe containers.
  • Serve with cornbread for a complete meal.
