  • 1 cup cooked chickpeas (or 1/2 cup red lentils, rinsed)
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan, for serving

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  4. Add the cumin, coriander, turmeric, and cayenne pepper. Stir constantly for 30 seconds to toast the spices.
  5. Pour in the pumpkin puree, coconut milk, and vegetable broth. Stir well to combine everything smoothly.
  6. Bring the mixture to a gentle simmer. Add the salt and optional sugar.
  7. If using chickpeas, stir them in now. If using lentils, add them and simmer for 15-20 minutes, or until tender.
