You will make wonderfully moist, tender, bakery-style pistachio muffins. This easy recipe delivers intense pistachio flavor, perfect for breakfast, a snack, or a sweet treat. We aim for a professional look and a comforting texture.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1/2 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional, for deeper flavor)
  • 3/4 cup finely chopped raw pistachios (plus 2 tablespoons for topping)
  • 1/4 cup pistachio paste or finely ground pistachios mixed with a tiny bit of oil (for intense color/flavor)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the melted butter, eggs, milk, vanilla extract, and almond extract until just combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just moistened. Do not overmix; a few lumps are fine.
  5. Gently fold in the 3/4 cup of chopped pistachios and the pistachio paste/ground pistachio mixture until evenly distributed.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Sprinkle the remaining 2 tablespoons of chopped pistachios over the tops of the batter.
  8. Bake for 18 to 20 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the best flavor, use high-quality, unsalted pistachios.
  • To achieve a deeper green color naturally, ensure your ground pistachios or paste are vibrant.
  • If you prefer a crunchy top like a bakery muffin, sprinkle a small amount of coarse sugar over the tops before baking.
  • This recipe works well with buttermilk instead of regular milk for extra tenderness.
