2 tablespoons olive oil
1 large onion, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
2 (15 ounce) cans black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1 cup vegetable broth
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the onion and bell pepper. Cook until softened, about 5 to 7 minutes.
Add the minced garlic, chili powder, cumin, smoked paprika, and oregano. Cook for 1 minute until fragrant.
Stir in the rinsed black beans, kidney beans, crushed tomatoes, tomato sauce, and vegetable broth. Add cayenne pepper if you want heat.
Bring the mixture to a simmer. Reduce the heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour.
Season with salt and pepper to your preference before serving.
Notes
For a smoky flavor, increase the smoked paprika to 2 teaspoons.
Add 1 cup of frozen corn during the last 15 minutes of cooking for texture.
Serve with your favorite toppings like avocado, cilantro, or a dollop of sour cream or plain Greek yogurt.
