Ingredients
Scale
1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large pita breads
1 cup shredded lettuce
1/2 cup chopped tomatoes
1/2 cup chopped red onion
Tzatziki sauce (store-bought or homemade)
Instructions
In a bowl, combine chicken pieces, olive oil, lemon juice, oregano, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
Marinate the chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
Cook the marinated chicken in a skillet over medium-high heat until browned and cooked through, about 8-10 minutes.
Warm the pita breads according to package directions.
Assemble the gyros by filling each warm pita with cooked chicken, lettuce, tomatoes, red onion, and a generous amount of tzatziki sauce.
Notes
For a spicier gyro, add a pinch of red pepper flakes to the marinade.
You can grill the chicken instead of pan-frying for a smoky flavor.
Homemade tzatziki can be made with Greek yogurt, cucumber, garlic, lemon juice, dill, and salt.
