  • 1 (10 ounce) can Ro*Tel diced tomatoes and green chilies, undrained
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups chicken broth
  • 4 ounces cream cheese, cubed
  • 1 teaspoon ground cumin (optional)
  • Optional toppings: Shredded cheddar cheese, sour cream, fresh cilantro, tortilla strips

Instructions

  1. Place the chicken breasts, black beans, kidney beans, Ro*Tel, cream of chicken soup, green chiles, taco seasoning, and chicken broth into a large pot or slow cooker.
  2. If using the stovetop, bring the mixture to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 20 minutes, or until the chicken is cooked through.
  3. If using the slow cooker, cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove the cooked chicken from the pot and shred it using two forks. Return the shredded chicken to the soup.
  5. Stir in the cubed cream cheese until it melts completely, creating a creamy texture.
  6. Taste the soup and stir in the ground cumin, if using.
  7. Serve immediately with your preferred toppings.

Notes

  • For the stovetop method, if you prefer a thicker soup, remove about 1 cup of the broth before adding the cream cheese, mix in 1 tablespoon of cornstarch, then stir back into the soup before adding the cream cheese.
