Make these incredibly easy and creamy white chicken enchiladas tonight. They feature tender shredded chicken smothered in a rich, tangy green chile cream sauce and baked until bubbly. This recipe is perfect for a quick weeknight family meal.

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 can (10.5 ounce) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked, shredded chicken (rotisserie works great)
  • 10 small flour tortillas
  • 2 cups shredded Monterey Jack cheese (divided)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook until soft, about 4 minutes.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the cream of chicken soup, sour cream, chicken broth, cumin, salt, and pepper to the saucepan. Whisk until the sauce is smooth.
  5. Stir in the diced green chiles and 1 cup of the shredded Monterey Jack cheese. Heat the sauce until just simmering, stirring constantly. Do not boil.
  6. Dip each flour tortilla briefly into the warm sauce to soften it slightly.
  7. Arrange the softened tortillas in a single layer in the prepared baking dish.
  8. Spoon the shredded chicken evenly down the center of each tortilla.
  9. Roll the tortillas up tightly and place them seam-side down in the baking dish.
  10. Pour the remaining white sauce evenly over the rolled enchiladas.
  11. Sprinkle the remaining 1 cup of Monterey Jack cheese over the top.
  12. Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.

Notes

  • Using pre-cooked, shredded chicken drastically cuts down on your prep time.
  • For a spicier sauce, add a dash of cayenne pepper or use hot green chiles.
  • If your sauce seems too thick, add a splash more chicken broth until you reach your desired consistency.
