Make this easy, creamy zucchini soup for a quick, healthy meal. This recipe uses simple ingredients to achieve a rich texture perfect for using up garden zucchini or enjoying a light dinner.

  • 4 medium zucchini, chopped
  • 1 medium potato, peeled and chopped (optional, for extra creaminess)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or cashew cream for vegan)
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add the chopped zucchini and potato (if using) to the pot. Stir well.
  5. Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat and simmer until the zucchini and potato are very tender, about 15-20 minutes.
  6. Remove the pot from the heat. Use an immersion blender to blend the soup until completely smooth and creamy. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth, then return to the pot.
  7. Stir in the heavy cream (or vegan alternative). Heat gently until warmed through, but do not boil.
  8. Season generously with salt and black pepper to your taste.
  9. Serve hot, garnished with fresh basil.

Notes

  • For a vegan version, omit the heavy cream and use 1/2 cup of full-fat cashew cream or skip it entirely for a lighter, broth-based soup.
  • If you skip the potato, blend in 1/4 cup of soaked raw cashews or 1/4 cup of white beans for creaminess while keeping it low-carb focused.
  • This soup is best made on the stovetop but can be adapted to a one-pot method using an Instant Pot.
