12 sheets rice paper wrappers
1 cup finely chopped cooked chicken or crumbled firm tofu
1/2 cup shredded cabbage
1/4 cup shredded carrot
2 tablespoons chopped green onion
1 teaspoon grated fresh ginger
1 teaspoon soy sauce (or tamari for gluten-free)
1/2 teaspoon sesame oil
Vegetable oil for pan-frying, or cooking spray for air frying
Instructions
In a medium bowl, combine the cooked chicken or tofu, cabbage, carrot, green onion, ginger, soy sauce, and sesame oil. Mix well until the filling is evenly distributed.
Prepare a shallow dish of warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Do not oversoak.
Lay the softened wrapper flat on a clean, damp surface. Place about 2 tablespoons of filling near the bottom edge.
Fold the sides of the wrapper inward over the filling. Then, tightly roll the wrapper upwards, like a small spring roll, to seal the dumpling. Repeat with the remaining wrappers and filling.
To pan-fry: Heat about 1/4 inch of vegetable oil in a skillet over medium heat. Carefully place the dumplings in the hot oil, seam-side down first. Fry for 2-3 minutes per side until golden brown and crispy. Remove and drain on paper towels.
To air fry: Lightly spray the dumplings with cooking spray. Place them in a single layer in the air fryer basket. Cook at 375°F (190°C) for 8-10 minutes, flipping halfway through, until golden and crisp.
Serve your crispy rice paper dumplings immediately with a dipping sauce.
Notes
Ensure your water is warm, not hot, to soften the rice paper correctly.
Keep the filling mixture relatively dry; excess moisture will make the wrappers tear.
If you prefer a vegan option, use tofu and ensure your soy sauce is vegan-friendly.
These are best eaten immediately after cooking for maximum crispness.
