Make this incredibly simple Crockpot Potato Soup for a warm, comforting meal with minimal effort. You get rich, creamy flavor with bacon and cheese, perfect for a cozy night in.

Ingredients

Scale
  • 3 lbs frozen hash browns or shredded potatoes, thawed
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 (10.75 oz) can cream of chicken soup
  • 1 (10.75 oz) can cream of celery soup (or substitute with more cream of chicken)
  • 1 cup milk
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese (for topping)
  • 1/2 cup cooked, crumbled bacon (for topping)
  • 2 green onions, sliced (for topping)
  • Salt and pepper to taste

Instructions

  1. Place the thawed potatoes, chopped onion, chicken broth, cream of chicken soup, and cream of celery soup into the slow cooker.
  2. Stir everything together well.
  3. Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until potatoes are tender.
  4. About 30 minutes before serving, reduce the heat to low and add the cubed cream cheese. Stir occasionally until the cream cheese is fully melted and the soup is smooth and creamy.
  5. Stir in the milk. Heat through, but do not boil after adding the milk.
  6. Taste the soup and add salt and pepper as needed.
  7. Ladle the soup into bowls. Top each serving generously with shredded cheddar cheese, crumbled bacon, and sliced green onions.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cream cheese.
  • You can use sour cream instead of milk for an extra tangy flavor.
  • This soup tastes even better the next day.
