Make these fluffy, high-protein egg bites at home using cottage cheese for a creamy texture. They are perfect for quick, grab-and-go breakfasts and ideal for meal prepping.

  • 1 cup cottage cheese (2% or full fat)
  • 6 large eggs
  • 1/4 cup Greek yogurt (plain, non-fat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheese (Monterey Jack or cheddar blend)
  • 1/2 cup cooked, crumbled bacon (optional add-in)
  • 1/2 cup chopped spinach (optional add-in)

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin or silicone mold.
  2. In a blender, combine the cottage cheese, eggs, Greek yogurt, salt, pepper, and garlic powder. Blend until the mixture is completely smooth and creamy. This step is key for fluffy egg bites.
  3. Stir in your chosen add-ins, like bacon and spinach, and half of the shredded cheese into the egg mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full. Sprinkle the remaining shredded cheese over the top of each cup.
  5. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean. If using a silicone mold, baking time may be slightly longer.
  6. Remove the tin from the oven and let the egg bites cool in the tin for 5 minutes before carefully removing them.
  7. Serve warm or store them for later. These are fantastic for your next meal prep session.
