1 sheet frozen puff pastry, thawed
4 ounces soft goat cheese, crumbled
2 tablespoons honey, plus extra for drizzling
1 large egg, beaten (for egg wash)
1 teaspoon fresh thyme leaves (optional)
Pinch of black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place about 1 teaspoon of crumbled goat cheese in the center of each square.
Fold two opposite corners of the square toward the center, overlapping them slightly to create a small pouch or bite shape, leaving some cheese visible. Gently press the edges to seal.
Arrange the bites on the prepared baking sheet.
Brush the tops of the pastry bites lightly with the beaten egg wash.
Sprinkle the optional thyme leaves and a small pinch of black pepper over the tops.
Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and let cool slightly on the baking sheet.
Drizzle the warm bites with the remaining honey just before serving.
Notes
You can assemble these bites up to 4 hours ahead of time and keep them covered in the refrigerator before brushing with egg wash and baking.
For a nuttier flavor, sprinkle finely chopped pecans or walnuts over the cheese before baking.
If you do not have fresh thyme, use 1/4 teaspoon of dried thyme.
