  • 1 (9 inch) unbaked pie crust
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 cup cold water
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Place the unbaked pie crust on a baking sheet.
  2. In a medium bowl, whisk together the sugar, flour, cocoa powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk the cold water and eggs together until combined.
  5. Pour the egg mixture slowly into the dry ingredients, mixing until just combined. Do not overmix.
  6. Stir in the vanilla extract.
  7. Pour the batter into the unbaked pie crust. Sprinkle the chocolate chips evenly over the top of the batter.
  8. Bake for 40 to 45 minutes, or until a toothpick inserted near the edge comes out mostly clean (the center will remain gooey).
  9. Let the pie cool on a wire rack for at least 30 minutes before slicing and serving warm.
