Make this fresh, sweet, and spicy grilled peach salsa in just 10 minutes. It is perfect as a dip or a topping for grilled meats and tacos.

Ingredients

  • 3 ripe peaches, halved and pitted
  • 1/2 red onion, finely diced
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Lightly brush the cut sides of the peaches with olive oil.
  2. Grill the peaches over medium-high heat for 3 to 4 minutes per side, until grill marks appear and the fruit softens slightly.
  3. Remove peaches from the grill and let them cool for 5 minutes.
  4. Dice the grilled peaches into small pieces.
  5. In a medium bowl, combine the diced grilled peaches, red onion, minced jalapeño, and cilantro.
  6. Squeeze the lime juice over the mixture.
  7. Season with salt and pepper.
  8. Stir gently to combine all ingredients.
  9. Serve immediately or chill for later use.

Notes

  • For a smoky flavor, use chipotle powder instead of fresh jalapeño.
  • If you do not have a grill, you can broil the peaches for 5 minutes, turning once.
  • This salsa tastes best when made fresh, but it keeps well in the refrigerator for up to 3 days.
