Make restaurant-style hibachi steak at home quickly using a simple marinade and a hot skillet. This recipe focuses on achieving the savory, buttery flavor of Japanese steakhouse beef.

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions

  1. In a medium bowl, combine the steak cubes with soy sauce, mirin, ground ginger, and black pepper. Toss to coat and let it marinate for at least 15 minutes.
  2. Heat 2 tablespoons of butter in a large skillet or wok over medium-high heat until it foams.
  3. Add the marinated steak to the hot skillet in a single layer, avoiding overcrowding. Sear for 2 to 3 minutes per side until browned and cooked to your preferred doneness. Remove the steak from the skillet and set aside.
  4. Reduce the heat to medium. Add the remaining 2 tablespoons of butter and the minced garlic to the skillet. Cook for 30 seconds until fragrant.
  5. Pour in the water and rice vinegar. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let the sauce reduce slightly for about 1 minute.
  6. Return the steak to the skillet. Drizzle with sesame oil and toss everything together until the steak is coated in the garlic butter sauce.
  7. Serve immediately, perhaps over fried rice or with grilled vegetables.

  • For best results, use a heavy-bottomed skillet to maintain high heat during searing.
  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and whisk it into the simmering sauce before returning the steak.
