Make this simple, no-bake ice cream pie using a chocolate cookie crust and creamy cookies and cream filling. This is a quick frozen dessert perfect for summer or parties.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs (about 30 cookies)
  • 1/4 cup unsalted butter, melted
  • 1/2 gallon vanilla ice cream, softened slightly
  • 1 cup crushed chocolate sandwich cookies (like Oreos)
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the chocolate cookie crumbs and melted butter in a bowl. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Freeze the crust for 30 minutes.
  2. Spread the slightly softened vanilla ice cream evenly over the frozen crust. Sprinkle the crushed chocolate sandwich cookies over the ice cream layer. Return the pie to the freezer for at least 2 hours, or until firm.
  3. In a separate bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. This is your whipped topping.
  4. Spread the whipped topping over the frozen ice cream layer just before serving.
  5. Slice and serve immediately. Store leftovers in the freezer.

Notes

  • You can substitute graham cracker crumbs for the chocolate cookie crumbs for a different crust flavor.
  • If you do not have vanilla ice cream, use your favorite flavor, such as chocolate or coffee.
  • For cleaner slices, dip your knife in hot water and wipe it dry between cuts.
