This is Tariq’s comforting Italian Penicillin Soup, designed to soothe and restore. It features a bright, flavorful broth packed with vegetables and small pasta, perfect for when you need a warm hug in a bowl.

Ingredients

  • 6 cups good quality chicken broth
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/2 cup small pasta like pastina or ditalini
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 large lemon (about 3 tablespoons)
  • Salt and freshly ground black pepper to taste
  • Optional: Pinch of red pepper flakes for warmth

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth. Bring the mixture to a boil.
  5. Once boiling, add the small pasta. Cook according to package directions until al dente, usually 6 to 8 minutes.
  6. Reduce the heat to low. Stir in the fresh parsley and lemon juice.
  7. Season generously with salt and pepper. Taste and adjust seasoning as needed.
  8. Serve immediately while hot.

Notes

  • For extra depth, use homemade broth if possible.
  • If you prefer a smoother soup, you can carefully blend half of the soup mixture before adding the pasta, then return it to the pot.
  • A dash of Parmesan cheese sprinkled on top adds a nice salty finish.
