You can make perfect individual servings of the classic holiday dessert with these Easy No-Fuss Mini Pecan Pies. This recipe uses muffin tins for simple portioning and delivers that rich, buttery, sweet pecan flavor everyone loves, making holiday baking simple.

Ingredients

Scale
  • 1 package (14.1 ounces) refrigerated pie crusts (2 crusts total)
  • 1 cup granulated sugar
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • 2 large eggs
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup chopped pecans, plus extra whole pecans for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin.
  2. Unroll the pie crusts. Use a 3.5-inch round cutter to cut out circles from the dough. You should get about 12 to 14 circles.
  3. Gently press each dough circle into the wells of the prepared muffin tin, forming small pie shells. Prick the bottoms lightly with a fork.
  4. In a medium bowl, whisk together the sugar, melted butter, eggs, corn syrup, vanilla extract, and salt until well combined.
  5. Stir in the chopped pecans into the filling mixture.
  6. Carefully spoon the pecan filling mixture evenly into each unbaked pie shell, filling them about three-quarters full.
  7. Arrange a few whole pecan halves on top of the filling in each mini pie for decoration.
  8. Bake for 20 to 25 minutes, or until the crusts are golden brown and the filling is mostly set but still slightly jiggly in the center.
  9. Let the mini pies cool completely in the muffin tin on a wire rack before carefully removing them. This step helps them set firm.

Notes

  • For a richer crust flavor, consider using a shortbread crust recipe instead of store-bought dough.
  • If you do not have corn syrup, you can substitute it with maple syrup, though the texture may be slightly different.
  • These freeze well once cooled. Place parchment paper between layers before freezing.
  • Chef Tariq suggests adding a tiny pinch of smoked paprika to the filling for an unexpected depth of flavor.
