  • 1 cup Dried Cranberries
  • 1 cup Chopped Walnuts

Instructions

  1. In a large bowl, whisk together the flour, yeast, salt, and sugar.
  2. Add the cold water and mix with a wooden spoon until just combined. The dough will be shaggy and sticky.
  3. Gently fold in the dried cranberries and chopped walnuts until evenly distributed.
  4. Cover the bowl tightly with plastic wrap. Let the dough rest at room temperature for 12 to 18 hours.
  5. After the long rise, lightly flour a work surface. Scrape the dough out onto the surface.
  6. Gently fold the dough over onto itself a few times to form a rough ball. Do not overwork it.
  7. Place a sheet of parchment paper over the dough ball and let it rest for 30 minutes.
  8. During this rest, place a Dutch oven with its lid inside your oven and preheat the oven to 450 degrees F (232 degrees C).
  9. Carefully remove the hot Dutch oven from the oven. Lift the dough using the parchment paper and gently lower it into the hot pot.
  10. Cover the Dutch oven with the lid and bake for 30 minutes.
  11. Remove the lid and bake for an additional 10 to 15 minutes, until the crust is deep golden brown.
  12. Carefully remove the bread from the Dutch oven and cool completely on a wire rack before slicing.
