- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped apples (about 2 medium apples)
- Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add the granulated sugar and brown sugar to the dry ingredients and mix briefly.
- In a separate small bowl, whisk the egg, oil, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
- Fold in the chopped apples.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before moving them to a wire rack to cool completely.
Notes
- For whole wheat apple muffins, substitute half of the all-purpose flour with whole wheat flour.
- For a glaze, mix 1/2 cup powdered sugar with 1 tablespoon milk and drizzle over cooled muffins.
- You can substitute the oil with 1/2 cup unsweetened applesauce for a lower-fat option.
