You need a fast, reliable recipe for classic peanut butter cookies using just a few pantry staples. This simple method guarantees soft, chewy results every time.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the peanut butter, sugar, egg, vanilla extract, and baking soda. Mix well until you have a uniform dough.
  3. Roll the dough into small balls, about 1 inch in diameter, and place them two inches apart on the prepared baking sheets.
  4. Use a fork to press down on each ball, creating a classic crosshatch pattern. Press once in one direction, then press again perpendicular to the first marks.
  5. Bake for 10 to 12 minutes. The edges should look set, but the centers may still look slightly soft.
  6. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, slightly reduce the baking time.
  • If you want the cookies to spread less, chill the dough balls for 15 minutes before pressing them with the fork.
  • You can substitute half the granulated sugar with packed brown sugar for a richer flavor.
