1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup milk
1/4 cup vegetable oil
1 large egg
1 cup shredded mozzarella cheese, divided
1/2 cup pizza sauce
1/2 cup mini pepperoni, chopped
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
In a separate bowl, whisk together the milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
Gently fold in 3/4 cup of the mozzarella cheese and the chopped pepperoni into the batter.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Spoon about 1 teaspoon of pizza sauce onto the top of the batter in each muffin cup.
Sprinkle the remaining 1/4 cup mozzarella cheese and all of the Parmesan cheese over the tops.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the cheesy pizza cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For freezer lunches, cool the mini pizza muffins completely, then place them in a freezer-safe bag. Reheat them in the microwave or toaster oven when you are ready to eat.
You can substitute the pepperoni with cooked, crumbled sausage or finely chopped vegetables like bell peppers.
