Easy Pizza Muffins: Perfect Lunchbox Pizza Bites

Make these simple pizza muffins for a fun, kid-friendly pizza snack. They are great for parties or packing in lunchboxes.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Gently fold in 3/4 cup of the mozzarella cheese and the chopped pepperoni into the batter.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Spoon about 1 teaspoon of pizza sauce onto the top of the batter in each muffin cup.
  8. Sprinkle the remaining 1/4 cup mozzarella cheese and all of the Parmesan cheese over the tops.
  9. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cheesy pizza cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For freezer lunches, cool the mini pizza muffins completely, then place them in a freezer-safe bag. Reheat them in the microwave or toaster oven when you are ready to eat.
  • You can substitute the pepperoni with cooked, crumbled sausage or finely chopped vegetables like bell peppers.
  • This recipe makes great cheesy pizza cupcakes for any gathering.
