Make these bright and simple Smoked Salmon Cucumber Bites! They feature creamy dill spread and a sprinkle of everything bagel seasoning on crisp cucumber slices. This is a perfect, no-cook appetizer that looks elegant but takes minutes to prepare.

Ingredients

Scale
  • 1 large English cucumber
  • 8 ounces cream cheese, softened
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 4 ounces smoked salmon, chopped
  • 2 tablespoons everything bagel seasoning

Instructions

  1. Wash and slice the cucumber into rounds about 1/2 inch thick. Pat the slices dry with a paper towel.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Stir in the chopped dill, lemon juice, Dijon mustard, and black pepper. Mix well until fully combined.
  4. Gently fold in the chopped smoked salmon.
  5. Spoon or pipe the salmon mixture onto each cucumber slice.
  6. Sprinkle the top of each bite generously with everything bagel seasoning.
  7. Serve immediately for the best crunch.

Notes

  • If you do not have English cucumbers, use standard cucumbers but slice off the peel first.
  • For a smoother topping, you can blend the cream cheese mixture in a food processor.
  • Keep the cucumber slices dry before topping so they stay crisp.
  • This appetizer works well for gatherings because it requires no oven time.
