3 cups cooked short-grain sushi rice
1 tablespoon rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
8 ounces imitation crab meat, shredded
8 ounces cooked salmon, flaked
1/2 cup cream cheese, softened
1/3 cup mayonnaise
2 tablespoons Sriracha (adjust to taste)
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 cup shredded mozzarella cheese (optional, for topping)
2 tablespoons Furikake seasoning (for topping)
1 tablespoon toasted sesame seeds (for topping)
Nori sheets, cut into small squares (for serving)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a small bowl, mix the rice vinegar, sugar, and salt. Gently fold this mixture into the warm sushi rice until combined. Press the seasoned rice evenly into the bottom of the prepared baking dish.
In a medium bowl, combine the softened cream cheese, mayonnaise, Sriracha, soy sauce, and sesame oil. Mix until the sauce is smooth.
Gently fold the shredded imitation crab and flaked salmon into the creamy sauce mixture.
Spread the seafood mixture evenly over the layer of rice in the baking dish.
If using, sprinkle the mozzarella cheese lightly over the top layer.
Bake for 15 to 20 minutes, or until the topping is hot and lightly golden brown around the edges.
Remove from the oven. Sprinkle generously with Furikake seasoning and toasted sesame seeds.
Let the bake rest for 5 minutes before serving. Serve warm with small squares of nori sheets for scooping.
Notes
You can substitute real crab meat for imitation crab if desired.
For a spicier flavor, increase the amount of Sriracha in the sauce.
This dish is excellent made ahead of time; assemble completely, cover, and refrigerate. Add 5-10 minutes to the baking time if baking directly from the refrigerator.
