Bake soft, chewy cookies that capture the irresistible layers of a Twix bar: a buttery shortbread base, gooey caramel center, and rich milk chocolate topping. These homemade Twix Cookies are perfect for sharing.

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup soft caramel candies, unwrapped (or equivalent soft caramel sauce)
  • 1/2 cup heavy cream (for caramel, if making from scratch)
  • 12 ounces milk chocolate, chopped
  • 2 tablespoons coconut oil (optional, for chocolate coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
  6. Scoop rounded tablespoons of dough and gently flatten them slightly on the prepared baking sheets.
  7. Press a small indentation into the center of each cookie dough mound.
  8. Fill each indentation with a small amount of soft caramel. If using caramel candies, press one or two into the center.
  9. Bake for 9 to 11 minutes, or until the edges are lightly golden but the centers remain soft. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Prepare the chocolate topping: Gently melt the chopped milk chocolate with the coconut oil (if using) in a double boiler or microwave in short intervals, stirring until smooth.
  11. Once cookies are completely cool, drizzle or dip the top of each cookie into the melted chocolate. Let the chocolate set before serving.

  • If you prefer a quicker caramel layer, use store-bought soft caramel sauce and place a smaller dollop on the dough before baking.
