This protein-packed edamame hummus is a delicious and healthy snack dip perfect for any occasion. It’s easy to make at home and a great alternative to traditional chickpea hummus.

Ingredients

  • 1 (16 ounce) package frozen shelled edamame, thawed
  • 1/4 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic
  • 2 tablespoons olive oil, plus more for drizzling
  • 2-4 tablespoons cold water, or as needed
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon cumin
  • Optional toppings: paprika, chopped parsley, sesame seeds

Instructions

  1. Rinse and drain the thawed edamame.
  2. In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, salt, and cumin.
  3. Process until the mixture is mostly smooth.
  4. With the food processor running, gradually add cold water, 1 tablespoon at a time, until the hummus reaches your desired creamy consistency.
  5. Taste and adjust seasoning if needed.
  6. Transfer the hummus to a serving bowl. Drizzle with a little extra olive oil and garnish with optional toppings like paprika, parsley, or sesame seeds.
  7. Serve with your favorite dippers like pita bread, crackers, or fresh vegetables.
