Quick Keto Egg Roll in a Bowl

Make a deconstructed egg roll quickly in one pan. This recipe uses ground meat and coleslaw mix for a fast, low-carb dinner.

Ingredients

  • 1 tablespoon sesame oil
  • 1 pound ground pork or ground turkey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (14.5 ounce) can water chestnuts, drained and chopped
  • 1 (10 ounce) bag coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup low sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha or to taste
  • 1 teaspoon toasted sesame oil
  • Green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground meat to the skillet. Cook, breaking it up with a spoon, until browned, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  4. Stir in the chopped water chestnuts.
  5. Add the coleslaw mix to the skillet. Stir and cook until the cabbage wilts slightly, about 3 to 5 minutes.
  6. In a small bowl, whisk together the soy sauce, rice vinegar, sriracha, and toasted sesame oil.
  7. Pour the sauce mixture over the meat and vegetable mixture. Stir well to coat everything evenly. Cook for 1 minute until the sauce thickens slightly.
  8. Remove from heat. Serve immediately topped with sliced green onions and sesame seeds.

Notes

  • For a different protein, substitute ground chicken or ground beef for the pork.
  • If you do not have coleslaw mix, use 4 cups of shredded green cabbage and 1 cup of shredded carrots.
  • To make this recipe Whole30 compliant, use coconut aminos instead of soy sauce.
