  • 1 pound ground pork
  • 1 cup shredded carrots
  • 1 cup coleslaw mix
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 4 ounces shiitake mushrooms, sliced
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha (optional)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground pork and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add shredded carrots and coleslaw mix to the skillet. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5-7 minutes.
  4. Stir in minced garlic, grated ginger, and sliced shiitake mushrooms. Cook for another 2-3 minutes until fragrant and mushrooms are softened.
  5. In a small bowl, whisk together soy sauce, rice vinegar, honey, and sriracha (if using).
  6. Pour the sauce over the pork and vegetable mixture in the skillet. Stir well to combine and cook for 1-2 minutes, allowing the sauce to thicken slightly.
  7. Garnish with sliced green onions and toasted sesame seeds before serving.
