  • 1 ripe medium avocado, mashed very smooth (about 1/2 cup puree)
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup chopped walnuts or pecans (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the smooth mashed avocado until it is fully incorporated. Scrape down the sides of the bowl.
  5. Stir in the milk and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Gently fold in the cooled coffee until the batter is uniform.
  8. Pour the batter into the prepared cake pan. Sprinkle the optional chopped nuts over the top, if using.
  9. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
