2 large eggs
2 large egg yolks
2 Tbsp granulated sugar
1 Tbsp all-purpose flour
1/4 tsp salt
4 tsp salted caramel sauce (store-bought or homemade)
Edible gold flakes, for garnish
Powdered sugar, for dusting (optional)
Instructions
Preheat your oven to 425 degrees Fahrenheit. Lightly butter and flour four 6-ounce ramekins.
Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of simmering water, stirring until completely melted and smooth. Remove from heat and let cool slightly.
In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened, about 2 minutes.
Gently whisk the melted chocolate mixture into the egg mixture until just combined.
Whisk in the flour and salt until no streaks remain. Do not overmix.
Divide half of the batter evenly among the four prepared ramekins.
Spoon 1 teaspoon of salted caramel sauce into the center of the batter in each ramekin.
Top with the remaining batter, ensuring the caramel is covered.
Place the ramekins on a baking sheet. Bake for 12 to 14 minutes. The edges should look set, but the center should still be soft.
Carefully run a thin knife around the edge of each ramekin. Invert each cake onto a serving plate.
Garnish immediately with edible gold flakes before serving.
Notes
For a smoother presentation, chill the filled ramekins for 30 minutes before baking; this may require adding 1-2 minutes to the bake time.
