4 ears of corn, husked
1/2 cup mayonnaise
1/4 cup crumbled cotija cheese
2 tablespoons lime juice
1 tablespoon chopped cilantro
1 teaspoon chili powder
1/2 teaspoon garlic powder
Salt to taste
Instructions
Preheat your grill or broiler.
Grill or broil the corn until lightly charred and tender, about 8-10 minutes, turning occasionally.
In a small bowl, mix together mayonnaise, cotija cheese, lime juice, cilantro, chili powder, and garlic powder.
Once the corn is cooked, spread the mayonnaise mixture evenly over each ear of corn.
Sprinkle with additional cotija cheese and chili powder, if desired.
