Ingredients
Scale
1/2 cup coconut flour
3 large eggs
1/4 cup unsweetened almond milk (or other low-carb milk)
1 tablespoon melted coconut oil (or butter)
1 teaspoon baking powder
1/2 teaspoon pure vanilla extract
Pinch of salt
Optional: 1-2 tablespoons erythritol or desired sweetener
Instructions
Whisk together the coconut flour and baking powder in a medium bowl.
In a separate bowl, whisk the eggs until slightly frothy.
Add the almond milk, melted coconut oil, and vanilla extract to the eggs. Whisk until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. The batter will be thick.
Let the batter rest for 5 minutes. This allows the coconut flour to absorb the liquid fully, leading to fluffier results.
Heat a lightly oiled griddle or non-stick pan over medium-low heat. Low heat prevents burning.
Pour batter onto the griddle, using about 1/4 cup for each pancake.
Cook for 3-4 minutes per side, until bubbles form on the surface and the edges look set. Flip carefully.
Cook the second side until golden brown.
Serve immediately with your favorite toppings.
Notes
For extra fluff, separate the egg whites and whip them to soft peaks before folding them into the final batter.
If your batter seems too thick after resting, add a teaspoon of milk at a time until you reach a pourable consistency.
Coconut flour absorbs liquid quickly; always let the batter rest before cooking.
