4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 large yellow onion, thinly sliced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup beef broth
1 tablespoon Worcestershire sauce
1/2 cup shredded Gruyère cheese
1/2 cup shredded Swiss cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook slowly for 15 to 20 minutes, stirring occasionally, until deeply caramelized.
Stir in the thyme, salt, and pepper into the onions. Remove the onions from the skillet and set aside.
Place the chicken breasts in the same skillet. Season the chicken lightly with salt and pepper.
Pour the beef broth and Worcestershire sauce into the skillet around the chicken. Bring the liquid to a simmer.
Transfer the chicken and the liquid from the skillet to the prepared baking dish. Top the chicken evenly with the caramelized onions.
Bake for 20 minutes.
Remove the dish from the oven and sprinkle the Gruyère and Swiss cheeses over the chicken.
Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
Notes
For deeper onion flavor, caramelize the onions slowly over low heat.
You can substitute Gruyère cheese with provolone if needed.
Serve this dish over egg noodles or mashed potatoes to soak up the sauce.
