  • 3-4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup beef broth
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1 tablespoon cornstarch (for thickening, optional)
  • Water (as needed)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the beef roast dry and season generously with salt and pepper.
  3. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the roast on all sides until deeply browned. Remove the roast from the pot and set aside.
  4. Add the sliced onions to the pot. Cook, stirring occasionally, until softened and beginning to caramelize, about 10-15 minutes.
  5. Add the minced garlic, thyme, and rosemary to the onions. Cook for 1 minute more until fragrant.
  6. Pour in the beef broth, red wine (if using), and Worcestershire sauce. Scrape the bottom of the pot to loosen any browned bits.
  7. Return the seared roast to the pot. Add the bay leaf. The liquid should come about halfway up the sides of the roast. Add a little water if needed.
  8. Cover the pot tightly and transfer to the preheated oven.
  9. Bake for 3 to 4 hours, or until the beef is fork-tender.
  10. Remove the roast from the pot. If desired, you can thicken the sauce by whisking cornstarch with a little cold water and stirring it into the simmering liquid in the pot. Cook until thickened.
  11. Slice or shred the roast and serve with the rich onion gravy.

Notes

  • For extra flavor, you can add a splash of balsamic vinegar to the onions as they caramelize.
  • If you don’t have red wine, you can substitute with an additional 1/2 cup of beef broth.
  • This pot roast tastes even better the next day!
