Ingredients

Scale
  • 1 loaf day-old brioche or challah bread, cut into 1-inch cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/4 cup unsalted butter, melted (for brushing/topping)
  • 1/4 cup brown sugar, packed (for cinnamon sugar topping)
  • 1 tablespoon ground cinnamon (for cinnamon sugar topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well or use paper liners.
  2. Arrange the bread cubes evenly in the prepared muffin cups, filling them about two-thirds full.
  3. In a medium bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
  4. Slowly pour the egg mixture over the bread cubes in the muffin tin, distributing it evenly. Gently press the bread down so it soaks up the liquid.
  5. Let the muffins sit for at least 15 minutes at room temperature so the bread fully absorbs the custard.
  6. In a small bowl, mix the brown sugar and the second amount of cinnamon for the topping.
  7. Brush the tops of the soaked muffins lightly with melted butter. Sprinkle the cinnamon sugar mixture generously over the tops.
  8. Bake for 18 to 22 minutes, or until the tops are golden brown and the center is set. A toothpick inserted near the center should come out mostly clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  10. Serve warm or store for later. Chef Tariq suggests a light dusting of powdered sugar before serving.

Notes

  • Use slightly stale or day-old bread for the best texture; fresh bread can become too soggy.
  • This recipe works well for meal prepping; store cooled muffins in an airtight container.
  • You can add mix-ins like blueberries or chocolate chips before baking if desired.
  • For an extra rich flavor, substitute half the milk with half-and-half.
