1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips
For the Frosting:
1/2 cup (1 stick) unsalted butter, softened
2 cups powdered sugar, sifted
1/4 teaspoon peppermint extract
2-3 tablespoons milk
Green food coloring (optional)
2 tablespoons chopped mint chocolate candies for topping
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a mini muffin pan or line it with mini paper liners.
In a medium bowl, whisk the melted butter and granulated sugar together until combined.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate small bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the chocolate chips.
Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 12-15 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
Let the brownies cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
To make the frosting, beat the softened butter in a bowl until creamy.
Gradually add the powdered sugar, beating until smooth.
Mix in the peppermint extract and 2 tablespoons of milk. Add the remaining milk if needed to reach a spreadable consistency. Add a drop of green food coloring if desired.
Once the brownies are completely cool, pipe or spread a small amount of mint frosting onto the top of each bite.
Sprinkle the chopped mint chocolate candies over the frosting before serving.
Notes
For the best texture, avoid overbaking the brownie bites. They should remain fudgy.
