You will make incredibly fudgy, naturally sweetened brownies using Medjool dates. These date brownies deliver deep chocolate flavor and a decadent texture without relying on refined sugar, making them a satisfying treat.

Ingredients

Scale
  • 1 cup Medjool dates, pitted and packed
  • 1/2 cup hot water
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Place the pitted dates and hot water in a food processor. Blend until you create a smooth, thick paste. Scrape down the sides as needed.
  3. Add the melted coconut oil, eggs, and vanilla extract to the date paste. Process until just combined.
  4. In a separate bowl, whisk together the cocoa powder, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients in the food processor. Pulse until just incorporated. Do not overmix.
  6. Spread the batter evenly into the prepared baking pan. Sprinkle chocolate chips over the top, if using.
  7. Bake for 20 to 25 minutes. A toothpick inserted near the edge should come out mostly clean, but the center should remain very fudgy.
  8. Let the date brownies cool completely in the pan before lifting them out and cutting them into squares. Cooling helps set the fudgy texture.

Notes

  • Using Medjool dates is key as they are naturally softer and sweeter than other varieties.
  • For an extra rich flavor, use high-quality cocoa powder.
  • These brownies are best enjoyed at room temperature or slightly chilled.
  • If you prefer a nuttier flavor, you can substitute 1/4 cup of the dates with walnuts or pecans blended in step 3.
