Bake the ultimate fudgy Oreo brownies with a gorgeous, shiny, crinkly top. This recipe loads the rich, decadent chocolate batter with whole Oreos for an extra layer of crunch and creaminess in every bite.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 1 1/4 cups granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups Oreo cookies, roughly chopped and some left whole

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the paper.
  2. In a medium saucepan over low heat, melt the butter completely. Remove from heat.
  3. Whisk the granulated sugar and brown sugar into the melted butter until fully combined.
  4. Add the eggs one at a time, whisking well after each addition until the mixture is smooth and glossy. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined. Do not overmix.
  7. Fold in most of the chopped Oreo cookies, reserving a few whole ones for the top if desired.
  8. Pour the batter into the prepared pan and spread evenly. Top with the remaining Oreos.
  9. Bake for 30 to 35 minutes. For fudgy centers, the edges should look set, and a toothpick inserted near the edge should come out with moist crumbs attached (not wet batter).
  10. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Cut into squares.

Notes

  • For the best crinkly top, ensure your sugar mixture is warm when you whisk in the eggs.
  • To get that shiny top, do not overbake. Undercooking slightly yields a fudgier texture.
  • Use high-quality cocoa powder for a deep chocolate flavor.
  • Cooling completely before cutting prevents messy, crumbly slices.
