  • 1/4 teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup salsa
  • 1 lime, cut into wedges

Instructions

  1. In a medium bowl, combine shrimp, olive oil, minced garlic, lime juice, chili powder, cumin, salt, and pepper. Toss to coat the shrimp evenly. Let marinate for at least 15 minutes.
  2. Preheat your grill to medium-high heat.
  3. Thread the marinated shrimp onto skewers if desired, or place them directly on the grill grates.
  4. Grill the shrimp for 2-3 minutes per side, or until they are pink and cooked through.
