2.5 lbs Yukon Gold potatoes, peeled and quartered
1 whole head of garlic
4 tablespoons unsalted butter, softened
1/2 cup heavy cream, warmed
1/4 cup whole milk, warmed
1 teaspoon salt, plus more for boiling water
1/2 teaspoon black pepper
2 tablespoons fresh chives, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Slice the top quarter off the head of garlic, exposing the cloves. Drizzle the exposed cloves with 1 teaspoon of olive oil. Wrap the garlic head tightly in aluminum foil.
Roast the garlic for 35 to 45 minutes, or until the cloves are soft and golden brown. Set aside to cool slightly.
Place the peeled and quartered potatoes in a large pot. Cover them with cold water by about one inch. Add 1 tablespoon of salt to the water.
Bring the water to a boil over high heat. Reduce heat and simmer for 15 to 20 minutes, or until the potatoes are fork-tender.
Drain the potatoes thoroughly in a colander. Return the drained potatoes to the hot, empty pot. Let them sit for 2 minutes to allow excess moisture to evaporate.
Squeeze the roasted garlic pulp out of the skins into the pot with the potatoes.
Add the softened butter, warmed heavy cream, warmed milk, 1 teaspoon of salt, and pepper to the pot.
Using a potato masher or a hand mixer on low speed, mash or mix the potatoes until they are smooth and creamy. Do not overmix.
Taste and adjust salt and pepper as needed. Serve immediately, garnished with fresh chives.
Notes
For extra fluffy potatoes, use a potato ricer instead of a masher.
If you need to make these ahead, prepare them up to the point of mashing. Reheat the cream/milk mixture before stirring it in just before serving.
