- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
- Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan.
- Roast for 20 minutes.
- Remove the pan from the oven and sprinkle half of the grated Parmesan cheese over the potatoes. Gently toss them on the pan.
- Return the potatoes to the oven and roast for another 10 to 15 minutes, or until the potatoes are tender and the cheese is lightly golden.
- Remove from the oven, sprinkle with the remaining Parmesan cheese, and serve immediately.
