Follow these steps to make a quick and flavorful Garlic Parmesan Sautéed Zucchini side dish using a skillet.

  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Wash and trim the ends of the zucchini. Slice the zucchini into rounds about 1/4 inch thick.
  2. Heat the olive oil and butter in a large skillet over medium-high heat until the butter melts.
  3. Add the sliced zucchini to the hot skillet in a single layer if possible. Cook for 3 to 4 minutes without stirring to allow the zucchini to brown slightly.
  4. Stir the zucchini and continue cooking for another 3 to 4 minutes until it is tender-crisp. Do not overcook; you want the zucchini to hold its shape.
  5. Reduce the heat to low. Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Be careful not to burn the garlic.
  6. Remove the skillet from the heat. Sprinkle the salt, pepper, and grated Parmesan cheese over the zucchini.
  7. Toss gently to coat everything evenly.
  8. Stir in the fresh parsley, if using. Serve immediately.

Notes

  • For best results, do not overcrowd the skillet; cook in batches if necessary to achieve proper browning.
  • If your zucchini releases a lot of water, increase the heat slightly during the cooking process to allow the liquid to evaporate.
  • You can substitute butter with more olive oil for a dairy-free option, though the flavor will change slightly.
