  • 2 medium zucchini
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into fry shapes, about 1/4 to 1/3 inch thick.
  3. Set up a dredging station with three shallow bowls.
  4. In the first bowl, place the flour.
  5. In the second bowl, whisk the egg.
  6. In the third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  7. Take a zucchini stick and dredge it lightly in the flour, shaking off any excess.
  8. Dip the floured stick into the egg, letting excess drip off.
  9. Coat the stick thoroughly in the breadcrumb mixture, pressing gently so the coating adheres.
  10. Place the coated zucchini fries in a single layer on the prepared baking sheet.
  11. Lightly spray the tops of the fries generously with cooking spray.
  12. Bake for 10 minutes.
  13. Flip the fries carefully. Spray the other side with cooking spray.
  14. Bake for another 8 to 10 minutes, or until golden brown and crispy.
  15. Serve immediately and enjoy your healthy snack!

Notes

  • For extra crispiness, you can bake them for a few minutes longer until they reach your preferred crunch level.
  • If you prefer a different flavor, try adding a pinch of cayenne pepper to the breadcrumb mix.
  • Make sure not to overcrowd the baking sheet; work in batches if necessary for even cooking.
