2 (6-ounce) tuna steaks (about 1 inch thick)
1 tablespoon vegetable oil
Salt and freshly ground black pepper to taste
1/2 cup thinly sliced scallions (green parts only)
1/4 cup finely minced fresh ginger
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
Instructions
Pat the tuna steaks completely dry with paper towels. Season both sides generously with salt and pepper.
Heat the vegetable oil in a skillet over medium-high heat until it shimmers.
Carefully place the tuna steaks in the hot skillet. Sear for 2-3 minutes per side for medium-rare, depending on thickness.
Remove the tuna from the skillet and set aside on a plate to rest.
In the same skillet (off the heat), combine the sliced scallions and minced ginger.
Add the soy sauce, rice vinegar, and sesame oil to the scallion-ginger mixture. Stir gently to combine, warming slightly from the residual heat of the pan.
Spoon the ginger scallion sauce evenly over the rested tuna steaks.
Serve immediately.
Notes
Use sushi-grade tuna for the best results if you prefer a very rare center.
Adjust the amount of ginger to your personal taste preference.
This sauce is also wonderful over steamed rice or noodles.
