Ingredients
Scale
1 cup Rolled Oats
1/2 cup Almond Butter
1/3 cup Honey or Maple Syrup
1/4 cup Ground Flaxseed
2 tablespoons Shredded Unsweetened Coconut
1 tablespoon Chia Seeds
1 teaspoon Ground Ginger
1/2 teaspoon Ground Turmeric
Pinch of Black Pepper (to help turmeric absorption)
Instructions
Place all ingredients into a medium mixing bowl.
Mix well with a sturdy spoon or your hands until everything is fully combined and a sticky dough forms.
If the mixture seems too dry, add a teaspoon of water or more nut butter until it holds together.
Roll the mixture into small, bite-sized balls, about 1 inch in diameter.
Place the finished energy balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to let them firm up before serving.
Store leftovers in an airtight container in the refrigerator.
Notes
For a deeper flavor, lightly toast the rolled oats before mixing.
You can substitute sunflower seed butter if you have a nut allergy.
Roll the finished balls in extra shredded coconut or hemp seeds for a nice coating.
These stay fresh in the fridge for up to one week.
