Gochujang Chicken Burger

Make a flavorful chicken burger featuring a spicy and sweet Gochujang glaze and a crunchy kimchi slaw topping.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, pounded to 1/2 inch thickness
  • 1/4 cup Gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon ground ginger
  • 4 hamburger buns
  • 4 slices provolone or Monterey Jack cheese (optional)
  • 1 tablespoon vegetable oil
  • For Kimchi Slaw: 1 cup shredded cabbage, 1/2 cup chopped kimchi, 2 tablespoons mayonnaise, 1 teaspoon lime juice

Instructions

  1. Combine Gochujang, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a bowl to make the glaze. Set aside half of the glaze for basting later.
  2. Place the chicken pieces in the remaining half of the glaze and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Prepare the kimchi slaw by mixing the shredded cabbage, chopped kimchi, mayonnaise, and lime juice in a small bowl. Set aside.
  4. Heat the vegetable oil in a large skillet or grill pan over medium-high heat.
  5. Cook the marinated chicken for 5 to 7 minutes per side, until fully cooked through (internal temperature reaches 165°F or 74°C).
  6. During the last minute of cooking, brush the chicken liberally with the reserved glaze.
  7. If using cheese, place a slice on top of each chicken piece during the last minute and cover the pan briefly to melt.
  8. Lightly toast the hamburger buns.
  9. Assemble the burgers: Place the glazed chicken on the bottom bun, top with the melted cheese (if using), and finish with a generous portion of kimchi slaw. Place the top bun on the slaw.

Notes

  • You can air fry the chicken at 375°F (190°C) for 15-20 minutes, brushing with glaze halfway through cooking.
  • For extra heat, add a pinch of cayenne pepper to the glaze mixture.
  • Use brioche buns for a richer flavor profile.
